Takakau Bread

Ingredients:


  • 5 Cups Plain Flour
  • 5 tsp Baking Powder
  • Pinch Salt
  • 1lt Cold Water
  • 4 Eggs
  • 100ml Cream
  • Salt and Pepper
  • 2 Tomatoes, cut into wedges
  • Chives

Pre-heat oven to 400F (200C).
Sift flour and Baking Powder into a large bowl.
Make a well in the center and pour in water, combine mixture together.

Turn out onto a floured bench and knead gently.
Press to a flat round shape 2cm thick.
Place onto a lightly greased baking tray.

Bake for approximately 30 minutes to a light golden colour.

Serve hot or cold.
Leftovers when cooled can be covered with a damp tea-towel and/or stored in an airtight container.
Boil eggs till just cooked, remove shell and mash in bowl with a fork. Season with salt and pepper and add the cream.

Chop 1 tablespoon of chives and mix with the egg. Stir all ingredients together.
Spread the egg over the top of the takakau bread, garnish with the tomato wedges and sprig of chives.
