Ingredients:
- 1/3 cup organic sugar
- 2 cups cooked apple, chopped
- 2 large free range eggs
- 1 ¼ cups organic sugar
- Grated citrus zest of lemon
- 2/3 cup fruity olive oil
- 2/3 cups wrights verjuice
- 1 teaspoon vanilla extract
- ½ cup kiwi organics express polenta
- 1 ¼ cups of plain flour
- 1 ½ teaspoons baking powder

Heat the oven to 160 degrees Celsius
Line a cake tin or individual ramekins with baking paper
Evenly sprinkle base with first measure of organic sugar
Spread the apple over the sugar

In a mixer or by hand whisk eggs, second measure of sugar and citrus zest till very thick and pale – 4 to 6 minutes
Slowly whisk in verjuice, olive oil and vanilla extract
Fold in polenta and sifted dry ingredients

Pour into prepared tins and bake for 65 to 75 minutes or until a skewer inserted comes out with nothing sticking to it
Take cake out of the oven and set aside to cool for 7 mins
Turn out onto a serving dish
Remove the baking paper and garnish with your personal touch!
