Boiled Wild Duck with Miro Berries, Pikopiko and Maori Potato

Ingredients:

  • 1 Duck, plucked and cleaned
  • 1 Pukeko, plucked and cleaned
  • 1 cup Miro Berries, (harvest from the Miro tree between April and May. These can be frozen for later use)
  • 10 Pikopiko shoots
  • 1 bunch Fresh Watercress
  • 1 Kamokamo, quarted.
  • 8 Maori Potato, Tutae Kuri
  • 1 Tablespoon Salt


Wash duck and pukeko. Cut each bird into quarters.

Place into a large pot and top with cold water. Season with salt and place in a couple of handfuls of miro berries.

Bring to the boil and simmer for at least two and a half hours or till the birds are tender.

Place the Maori potato into the same pot and cook for at least 15 minutes.

Add the pikopiko, kamokamo and watercress at the last minute and finish the boil (10 minutes).

Serve hot or cold
