Paua Fritters, Creamed Paua, Shrimps and Mushrooms

Ingredients:

  • 500g Paua
  • 200g All Purpose Shrimps
  • 200g Mushrooms, sliced
  • 2 Bacon, rashers
  • 1tsp Garlic, crushed
  • 200mls Cream
  • Chopped Parsley
  • Olive oil
  • Butter
  • Cracked Pepper


Paua Fritters:

  • 500g Paua, minced
  • 2 Medium onions, finely diced
  • 1 Egg, beaten
  • 2 Garlic cloves, crushed
  • Salt and pepper
  • Flour
  • 2 tablespoons Sweet thai chilli sauce


Creamed Paua:

Heat a small amount of butter and oil in a pan over a medium element or an open fire. Sauté diced bacon and mushrooms until cooked.
Tenderize the paua steaks and slice into strips. Add this to the pan along with the garlic.

Cook gently for a couple of minutes.

Add the shrimps.
Pour in cream and bring to a gentle simmer.

Allow reducing a little, stirring in the chopped parsley and cracked pepper to taste.

Serve inside a Paua shell with a small amount of cooked rice


Paua Fritters:

Place paua into a bowl and mix with chopped onions, garlic, egg, sweet thai chilli sauce, salt and pepper.

Mix in a little flour to thicken.
 Heat oil in a pan. Drop in tablespoons of the mixture. Cook gently for 3 minutes on each side.
