Ingredients:
- 6 Kaeeo (Sea Tulip)
- 1 Paua
- 1 Onion, finely chopped
- 2 Eggs
- 2 cups Flour
- Pepper
- 100mls Olive oil
Remove the flesh from the kaaeo shell. Chop into small pieces, place into a bowl.
Shuck the paua from it’s shell, remove the skirting, stomach and tooth with your thumb.
Chop the paua into small chunks. Place into a hand grinder and mince the paua. Add to the kaaeo.
Add the onion and eggs to the seafood. Season with freshly cracked pepper, mix all ingredients well.
Add the flour, stir to combine everything together.
Heat the olive oil in a pan, place a large spoonful of the mixture into the oil and cook first side till golden, repeat for the other side. Approximately 4 minutes each side.
Remove and drain off on absorbent paper.
Serve hot or cold with sweet thai chilli sauce.
