Marinated Kaaeo

 

Ingredients:

• 8 Kaaeo shucked, chopped
• ¼ cup Malt Vinegar
• 200g Sugar
• 2 Tomatoes, diced
• 1 Onion, finely diced
• Chives, chopped
 
Place chopped Kaaeo into a bowl.

In a smaller bowl dissolve sugar with 2 cups hot water.
Add the vinegar.

Pour onto the Kaaeo and stir to allow the hot water to partially blanch the flesh.

Stir in the onions and tomatoes.

Finally sprinkle on the chives for garnish.

Serve warm or chill overnight.
