Ingredients:
• 3 lb. paua, shelled
• 2 onions, chopped
• 3 tsp. corn flour
• 3/4 c. milk
• 1 pt. cream
• 1 oz. butter
• 1 Lemon, juice
• 1 Tablespoon Fresh
• Coriander, chopped
• Salt and pepper
• Ground nutmeg
Remove sac (pewa) and teeth from paua.
Place paua steak into a tea towel and tenderize with a mallot, chop into small chunks.
Place the paua into a grinder to mince into small pieces.
Chop 1 onion and mince thru grinder, fold into paua.
Melt butter in pan and sauté remaining onion.
Add minced paua and toss quickly to sauté. Add lemon juice.
Add cream and heat but do not boil.
Thicken with corn flour and milk as required and season with salt, pepper and nutmeg.
Stir in the chopped coriander.
Serve immediately on a bed of boiled rice and sprinkle nutmeg over.
