Ingredients:
Garlic Mussels:
- 12 Mussels
- Dry White Wine
- Seafood Stock
- Cream
- Garlic Cloves
- Coriander
- Butter
- Oil
Stir Fried Mussels:
- 1.5kg Green Lip Mussels
- 1 tbsp Peanut oil
- 15g Fresh Ginger
- 2 cloves Garlic
- 2 Tomatoes, diced
- 1 fresh red chili
- Tsp Saffron sprigs
- ½tsp Ground Tumeric
- ¼ cup Sweet Soy Sauce
- 60ml Seafood stock
- 60ml Water
- Lime juice
- Coriander Leaves
- For the garlic mussels
- Scrub Mussels, remove beards
- Heat oil and butter in wok:; stir fry garlic, onion,
- Add the mussels:
- Toss with coriander
- Flash with the white wine, add the stock and cream
- Reduce heat: simmer covered about 5 minutes.
- Remove from heat pour into a bowl garnish
- For the Stir Fried Mussels
- Scrub Mussels, remove beards
- Heat oil in wok:; stir fry ginger, garlic, onion, chilli, saffron, tomatoes and tumeric until mixture is fragrant
- Add kecap manis, stock and the water: bring to a boil
- Add the mussels: return to the boil
- Reduce heat: simmer covered about 5 minutes.
- Remove from heat pour into a bowl garnish with lemon
