Garlic Mussels / Spicy Stir Fried Mussels

Ingredients:

Garlic Mussels:

  • 12 Mussels
  • Dry White Wine
  • Seafood Stock
  • Cream
  • Garlic Cloves
  • Coriander
  • Butter
  • Oil

Stir Fried Mussels:

  • 1.5kg Green Lip Mussels
  • 1 tbsp Peanut oil
  • 15g Fresh Ginger
  • 2 cloves Garlic
  • 2 Tomatoes, diced 
  • 1 fresh red chili
  • Tsp Saffron sprigs
  • ½tsp Ground Tumeric
  • ¼ cup Sweet Soy Sauce
  • 60ml Seafood stock
  • 60ml Water
  • Lime juice
  • Coriander Leaves

  1. For the garlic mussels
  2. Scrub Mussels, remove beards
  3. Heat oil and butter in wok:; stir fry garlic, onion, 
  4. Add the mussels: 
  5. Toss with coriander
  6. Flash with the white wine, add the stock and cream
  7. Reduce heat: simmer covered about 5 minutes.
  8. Remove from heat pour into a bowl garnish 
  9. For the Stir Fried Mussels
  10. Scrub Mussels, remove beards
  11. Heat oil in wok:; stir fry ginger, garlic, onion, chilli, saffron, tomatoes and tumeric until mixture is fragrant
  12. Add kecap manis, stock and the water: bring to a boil
  13. Add the mussels: return to the boil
  14. Reduce heat: simmer covered about 5 minutes.
  15. Remove from heat pour into a bowl garnish with lemon
