Ingredients:
- 4 ½ cups of flour
- 1 tsp salt
- 2 cups luke warm water
- 2 tablespoon yeast
- 2 tablespoons sugar
- 50ml olive oil
Shrimp and tomato sauce:
- 6 fresh tomatoes, chopped
- 1 cup of shrimps
- 350g can of chopped tomatoes
- 1 onion, diced
- 4 basil leaves, chopped
- 1 garlic clove, chopped
- 1 teaspoon dried chilli flakes
- 100ml extra olive oil
- Salt and pepper

For the dough sprinkle the yeast and sugar onto the warm water and leave to the side to ferment.
In a bowl sieve the flour and salt, make a well in the centre, once the yeast has doubled in size mix with the flour to form a dough
Knead dough to form a smooth round ball
Place onto a board and smear olive oil over the top
Place to the side in a warm place and allow dough to prove.

For the sauce sprinkle oil into pan, sauté onions, garlic and basil, stir in the fresh tomatoes, can of chopped tomatoes, chilli flakes and simmer gently for 5 minutes
Stir in the cooked shrimps and heat thru for a further 5 minutes, season sauce with salt and pepper

Once dough has risen, roll out into a flat circle and place onto a baking tray
Spoon evenly over the pizza dough the shrimp and tomato sauce
Drizzle over the pizza some extra virgin olive oil
Place in an oven pre-heated to 220°C and bake for about 12 minutes, or until the edges of the base are golden and crisp.
Garnish with the oregano or marjoram and serve immediately
