Pikopiko Toroi

Ingredients:

* 20 Pikopiko
* 12 Fresh Green Lipped Mussels
* 1tbsp Baking Soda

Wash Pikopiko under cold water. Bring 5 litres of water to the boil, add the baking soda, add the pikopiko and cook for 10 minutes.

Once cooked refresh under cold water and strain.

Chop into small pieces and place into a bowl

Bring to the boil 1lt of water, add the mussels, place on the lid and steam till the mussels start to open.

Remove the meat from the mussels and cut into small pieces. Add to the pikopiko.

Place a mutton cloth or tea towel over the mussels and pikopiko and strain in the mussel stock.

Mix all ingredients together and serve chilled
