Mint Sauce / Mint and Onion Raita

Ingredients: 

  • 3 large handfuls of mint leaves
  • Salt 
  • 1 ½ cups sugar
  • 1litre boiling water
  • ¾ cup malt vinegar
  • ¼ cup lemon juice
  • 1cup cold water
  • 3 tablespoons gelatine
  • Green food coloring – optional
  • Mint and Onion Raita:
  • 1 cup Greek yoghurt
  • Green chilli, chopped
  • Small onion, finely diced
  • Paprika
  • 2 tablespoons of mint sauce

Wash and shake the mint leaves

Sprinkle with salt and chop finely. 

Put into a bowl

Pour water into a pot

Add sugar

Bring to the boil 

Pour onto the mint leaves

Stir

Allow to cool down

Dissolve gelatine in cold water

Add gelatine to mint

Lemon juice

Vinegar

Stir

Place into a fridge and allow to set

Serve with lamb

Whisk yoghurt in a bowl till smooth

Chop chilli

Chop onion

Add to yoghurt

2 tablespoons of mint sauce
